Avocados | 2, cut into wedges | |
Salt & Pepper | To taste | |
Flour | 1/4 cup | |
Eggs | 2, whipped | |
Breadcrumbs | 1 cup | |
Mayo | 1/4 cup | |
Sriracha | 2 tbsp. | |
Cayenne Pepper | 1/4 teaspoon |
Preheat oven to 425 degrees F.
Coat a baking sheet with oil.
Cut avocados into wedges, then sprinkle with salt and pepper.
Put flour, eggs and bread crumbs in 3 separate dishes.
Mix cayenne pepper into the flour. (You can leave this step out if you don’t like much heat).
Place avocado wedges in the flour, then the egg, then the bread crumbs, rolling and pressing to help it adhere.
Put the wedges on the baking sheet. Sprinkle oil on top.
Bake until golden, turning halfway through, 26 to 30 minutes.
Combine mayonnaise and Sriracha in serving bowl.
Serve avocado fries & spicy aioli, enjoy immediately.
