This is a classic way of making fried chicken cutlets. I’ll be using Italian herbs, but hey, get creative & use something else. This is a meal for 2 people. Calculate accordingly. Also, use fresh herbs! There’s no comparison in taste.
Take 2 chicken breasts and cut in half to make 4 cutlets.
Lay out 3 bowls: one with flour + salt & pepper, one with mixed egg, one with breadcrumbs + parsley, oregano & basil.
Take cutlets, dredge in flour, then egg mixture, then coat with breadcrumbs.
Place on a dish to prepare frying.
Heat olive oil in a large frying pan. Once oil is visibly hot, place cutlets in.
Fry for 4 mins on each side or until golden brown.
