Coconut & Lime Grilled Shrimp

Coconut & Lime Grilled Shrimp

Lime (juice & zest) 1
Garlic 2 cloves
Yellow Onion 1/4 cup
Fresh Cilantro 1/3 cup
Shredded Sweetened Coconut 1/3 cup
Olive Oil 1/4 cup
Soy Sauce 1/4 cup
Raw Shrimp (peeled) 1 pound

In a blender, combine lime zest, lime juice, garlic, onion, cilantro, coconut, oil and soy sauce. Blend until smooth.

Combine sauce with shrimp and marinate in refrigerator for about 2-4 hours.

Preheat an outdoor grill on medium heat. If using wood skewers, soak them in water for at least 20 minutes so they don’t catch on fire.

Thread shrimp on skewers and grill for 3 minutes on each side.
