|Yellow Onion||1/4 cup|
|Fresh Cilantro||1/3 cup|
|Shredded Sweetened Coconut||1/3 cup|
|Olive Oil||1/4 cup|
|Soy Sauce||1/4 cup|
|Raw Shrimp (peeled)||1 pound|
In a blender, combine lime zest, lime juice, garlic, onion, cilantro, coconut, oil and soy sauce. Blend until smooth.
Combine sauce with shrimp and marinate in refrigerator for about 2-4 hours.
Preheat an outdoor grill on medium heat. If using wood skewers, soak them in water for at least 20 minutes so they don’t catch on fire.
Thread shrimp on skewers and grill for 3 minutes on each side.
