Broccoli | 1 1/2 lbs | |
Water | 2 cups | |
Celery (chopped) | 3/4 cup (about 1 stalk) | |
Onion | 1/2 cup (about 1 medium onion) | |
Butter | 2 tablespoons | |
Flour | 2 tablespoons | |
Chicken Broth | 2 1/2 cups | |
Salt | 1/2 teaspoon | |
Pepper | 1/8 teaspoon | |
Heavy Cream | 1/2 cup |
Cut broccoli into small pieces (or blend).
Heat water to boil.
Add broccoli, celery and onion.
Cover, heat to boil. Then reduce heat and simmer 10 mins.
Melt butter, stir in flour, cook until smooth and bubbly.
Remove from heat, stir in broth. Add salt and pepper.
Heat to just boiling, then stir in cream.
Heat to a hot temperature, but not boiling.
Serve with cheese on top.
