Egg-Free Banana Bread

Egg-Free Banana bread

Mashed overripe bananas 3-4
vegetable oil 1 cup
ginger beer 2/3 cup
yoghurt 2 T
ground flax seed 1 T
flour 3 1/2 C
baking soda 2 tsp
baking powder 1 T
salt 1 1/2 tsp
cinnamon 1 tsp
nutmeg 1 tsp
cloves 1/2 tsp

Preheat oven to 350F/175C

Grease and flour three 7″x3″ loaf pans, or a 7″x11″ brownie pan.

Mix flax seed into ginger beer. Add bananas, vegetable oil, yoghurt, and sugar until well blended.

Add in flour, baking soda, baking powder, salt, and spices. Mix until just blended and pour into prepared pans.

Bake 50 mins, or until an inserted knife comes out cleanly.

note: Bananas can be substituted for pumpkin puree, grated zucchini, or grated apples.
