Enchilada Sauce


Oil (olive or avocado) 2 T
All purpose flour 2 T
Chili Powder 1/4 cup
Chicken Stock 2 cups
Garlic Powder 1/2 t
Cumin 1/2 t
Oregano 1/4 t
Salt to taste

Heat oil over medium-high heat in a small saucepot. Whisking constantly, add flour and cook 1 minute. Then add in spices and cook for 1 additional minute, continuing to whisk constantly.

Pour in stock slowly, continuing to whisk until smooth. Allow to reach a simmer, and reduce heat to maintain simmer for 10-15 minutes, or until sauce is thickened.

Season to taste with salt.
