Fresh Parsley (stems & leaves) | 1/3 cup, minced | |
Eggs | 3 | |
Bread Crumbs | 1 1/3 cups | |
Chicken Stock | 1/4 cup | |
Garlic | 3 cloves, minced | |
Shallot | 1, minced | |
Parmesan Cheese | 1/4 cup | |
Romano Cheese | 1/4 cup | |
Salt | 2 tbsp. | |
Pepper | 1 tbsp. | |
Red Pepper Flakes | 1/2 teaspoon | |
Olive Oil | 1/4 cup |
Mix all ingredients in a large bowl (thoroughly).
Roll a small handful of meat into balls.
Heat olive oil in frying pan on medium-high heat. (Wait until fully hot).
Once the oil is hot, take a few at a time and brown outsides of meatballs, turning often.
After all sides are seared, place on a baking sheet – giving each meatball space to bake.
Bake at 360 degrees F for about 15 -20 minutes, or until temperature reaches about 160 degrees F.
Option to add meatballs into a marinara sauce to make a meat sauce with spaghetti, you can also make a meatball hero with some mozz, or add meatballs to a lasagne.
