Fresh Parsley | 1 bunch, 1/3 cup, chopped | |
Ground Beef | 2 lbs | |
Ground Pork | 1 lb. | |
Bread Crumbs | 1 1/3 cups | |
Eggs | 3 | |
Chicken Stock | 1/4 cup | |
Garlic | 3 cloves, minced | |
Shallot | 2, minced | |
Parmesan Cheese | 1/2 cup | |
Romano Cheese | 1/3 cup | |
Salt | 3 tbsp. | |
Pepper | 2 tbsp. | |
Red Pepper Flakes | 1/2 teaspoon | |
Olive Oil | 1/4 cup |
Mix all ingredients in a large bowl thoroughly.
Roll a small handful of meat into balls.
Heat olive oil in a frying pan on medium-high heat.
Once very hot, brown the outsides of the meatballs, turning often.
After all sides are seared, place on a baking sheet – give each meatball space to bake.
Bake at 360 degrees F for about 15 minutes, or until temperature reaches about 160 degrees F.
Option to add meatballs to a marinara sauce & spaghetti, make a meatball hero, or add to a lasagne.
