Mac & Cheese

This is a 3 cheese, mac & cheese recipe topped with bacon bits. Substitute what you like.

Finely slice 3 yellow onions.

Place 1 tbsp. butter in a sauce pan on medium heat.

Let onions cook for 15 mins, stirring regularly, until lightly golden.

Heat up a pot of salted water for pasta.

Sprinkle in 3 tbsp. of flour into pan with onions, stirring until the onions soak up most of the flour.

Pour in 1 liter of milk into onion mixture (small amounts at a time). Let simmer.

Once pasta water is boiling, add in macaroni. Only cook for half the amount of time suggested, about 5 minutes.

Now for the star of the show.. cheese! We’re going to mix 100 grams of shredded cheddar, 100 grams of shredded gruyere (or something similar), and 100 grams of shredded parmesan.

If you have veggies that you want included, add in asparagus, broccoli, peas, spinach, etc. to the pan with onions.

Take some starchy pasta water and set aside.

Strain pasta.

Add a teaspoon of English mustard into pan. Take pan off burner.

Mix in a bit of the starchy pasta water to create the right creamy, silky consistency.

Add in macaroni, toss.

Top with a couple drops of Worcestershire sauce, mix.

Add everything into a baking pan.

Oven for 30 mins, 400 F.

CRUMBY BACON BIT TOPPING:

Cut bacon into small cubes along with a clove of garlic.

Add into a pan on medium heat, cook until lightly golden. Add in bread crumbs, mix until golden.

Sprinkle breadcrumbs on top, enjoy.
