Mahi Mahi | 2-3 cuts | |
Salt & Peper | To taste | |
Cornstarch | 2 tbsp. | |
Cayenne Pepper | 2 pinches | |
Coconut Milk | 2 tbsp. | |
Cashews (Unsalted) | 1 handful, chopped |
Rinse fish and pat dry with a paper towel.
Season with salt and pepper.
Mix cornstarch with cayenne pepper.
Pour coconut milk in a shallow bowl.
Place chopped cashews in another shallow bowl.
Dredge both sides of the fish in the cornstarch mixture, shaking off excess.
Then, dip into the coconut milk.
Lay on chopped cashews.
Place on a lightly greased baking dish.
Bake at 350 degrees F for 20 minutes until golden.
Cook to an internal temperature of 145 degrees F or until the fish flakes easily with a fork.
