Oatmeal Cookies with Cranberry & White Chocolate Chips


Butter (Unsalted) 1/2 cup, room temp.
White Sugar 1/2 cup
Brown Sugar 1/3 cup
Egg 1, room temp.
Vanilla 1 teaspoon
Flour 1 cup
Cinnamon 1/2 teaspoon
Baking Soda 1/2 teaspoon
Salt 1/2 teaspoon
Oats 1 1/2 cups
Dried Cranberries 1/2 cup
White Chocolate Chips 1/3 cup

In a large bowl, cream the butter and sugar until smooth.

Beat in eggs and vanilla.

Combine flour, cinnamon, baking soda, and salt in a separate bowl.

Stir dry mixture slowly into into wet mixture until just combined.

Gently stir in oats, white chocolate chips, and cranberries.

Roll dough into 2 inch balls, chill for 30 min.

Preheat the oven to 375°F.

Bake cookies for 9-13 minutes.

Remove cookies from the oven and allow them to cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
