Penne alla Vodka

Butter (unsalted) 1/2 stick (4 tbsp.)
Garlic (minced) 2 cloves
Onion (minced) 1
Vodka 2/3 cup
Tomato Puree 3/4 cup
Heavy Cream 1 cup
Ham (chopped & cooked) 1/4 pound
Tabasco / Hot Sauce 2 drops
Salt & Pepper 1/4 teaspoon of each
Penne Pasta 1 pound
Olive Oil 2 tbsp.
Parmesan Cheese 3/4 cup

To begin making Penne alla Vodka, melt butter in a deep large skillet over moderately low heat.

Add in onion & garlic, stirring occasionally until soft, about 5 minutes.

Stir in vodka, bring to simmer for 5 minutes.

Add tomato puree and cream, stirring occasionally, for 5 minutes.

Stir in ham, hot sauce, salt, pepper. Keep sauce warm over very low heat.

Cook penne in salted, boiling water until al dente, about 11 minutes.

Reserve 1/2 cup of water and drain pasta.

Add pasta to sauce, toss with cheese, adding a sprinkle of water if pasta seems too dry.
