|Butter (unsalted)||1/2 stick (4 tbsp.)|
|Garlic (minced)||2 cloves|
|Tomato Puree||3/4 cup|
|Heavy Cream||1 cup|
|Ham (chopped & cooked)||1/4 pound|
|Tabasco / Hot Sauce||2 drops|
|Salt & Pepper||1/4 teaspoon of each|
|Penne Pasta||1 pound|
|Olive Oil||2 tbsp.|
|Parmesan Cheese||3/4 cup|
To begin making Penne alla Vodka, melt butter in a deep large skillet over moderately low heat.
Add in onion & garlic, stirring occasionally until soft, about 5 minutes.
Stir in vodka, bring to simmer for 5 minutes.
Add tomato puree and cream, stirring occasionally, for 5 minutes.
Stir in ham, hot sauce, salt, pepper. Keep sauce warm over very low heat.
Cook penne in salted, boiling water until al dente, about 11 minutes.
Reserve 1/2 cup of water and drain pasta.
Add pasta to sauce, toss with cheese, adding a sprinkle of water if pasta seems too dry.
