Spinach (fresh) | 1 pound | |
Mozzarella Cheese | 1/2 cup, grated | |
Ricotta Cheese | 1 cup | |
Parmigiano-Reggiano Cheese | 2 tbsp. | |
Cherry Pepper | 2-4, cut into rings | |
Egg Yolk | 1 | |
Garlic | 2 cloves, minced | |
Salt & Pepper | To taste | |
Frozen Pizza Dough | 1, thawed | |
Marinara Sauce | 2-4 cups |
Preheat oven to 425° F.
In a pan, place garlic in olive oil, then begin cooking on medium heat. Cook until soft, about 3-5 minutes.
Add spinach to the pan and cook until wilted, about 3 minutes.
In another pot on low heat, begin to warm your marinara sauce.
After spinach is cooked, transfer to a colander, squeeze out excess liquid, then coarsely chop.
In a bowl, combine the chopped spinach, all cheeses, egg, salt and pepper.
Divide dough into 4 equal pieces, then roll out each piece about 8 in. round.
Working on half of each dough circle, place spinach filling, leaving a 1/2 inch margin on the edge of each circle, then sprinkle a few cherry pepper bits on top.
Fold the other half of the dough over the top of filling and pinch edges firmly to seal.
Transfer the spinach & cherry pepper calzones to a parchment lined or oiled baking sheet and bake for about 15-20 minutes or until golden.
Serve immediately with marinara sauce for dipping.
