To make this delicious spinach stuffed chicken recipe, preheat the oven to 375 degrees F.
Warm oil in a skillet over medium-high heat.
Add onions and cook until translucent.
Add spinach, cover, reduce heat to medium, cook until the spinach is wilted.
Transfer onions & spinach to a bowl. Add dill, cheese, 1/2 teaspoon of salt & pepper. Mix well.
Add salt & pepper to the chicken.
Place eggs in one bowl, panko in another. Coat baking sheet.
Slit each chicken breast along the side, cutting about 3/4 of the way through.
Stuff breasts with spinach mixture.
Dip breasts in egg, then in panko to coat.
Place spinach stuffed chicken on cooking sheet.
Bake for 45 minutes or until the internal temperature is 165 degrees F.
