whole tomatos | 28 oz can | |
fire roasted tomatos | 28 oz can, diced | |
water | 2 cups | |
vegetable, chicken, or beef broth | 2 cups | |
heavy cream | 1 1/2 cups | |
parmesan cheese | 1/4 cup | |
salt & pepper | to taste |
In a large pot, sauté onion in olive oil until clear. Add garlic and continue to cook for a few minutes.
Add tomato sauce, paste, water & broth, and bring to boil. Cover and let simmer around 30 minutes
Puree in a food processor or blender until desired consistency.
Add heavy cream, Parmesan, salt & pepper to taste.
