Tomato Soup


medium onion 1, diced
garlic cloves 3, minced
olive oil 1 T
tomato sauce 8 oz can
tomapto paste 6 oz can
whole tomatos 28 oz can
fire roasted tomatos 28 oz can, diced
water 2 cups
vegetable, chicken, or beef broth 2 cups
heavy cream 1 1/2 cups
parmesan cheese 1/4 cup
salt & pepper to taste

In a large pot, sauté onion in olive oil until clear. Add garlic and continue to cook for a few minutes.

Add tomato sauce, paste, water & broth, and bring to boil. Cover and let simmer around 30 minutes

Puree in a food processor or blender until desired consistency.

Add heavy cream, Parmesan, salt & pepper to taste.
