Waffle Cake: no waffle iron needed

Waffle Cake

Eggs 2, beaten
buttermilk, sour milk, or milk 2 cups
baking soda 1 tsp
flour 2 cups, sifted
baking powder 2 tsp
salt 1/2 tsp
oil, bacon fat, or melted butter 6 T
grated cheese to taste
chopped ham, bacon, nuts, or jam optional

Mix all the batter ingredients (first 7 ingredients) together and beat until smooth. This is a thin batter. Add stuffing ingredients of your choice. Pour into a cake or brownie pan (7×11″ works well) and bake at 350-375F for 30-40 minutes, until an inserted knife comes out clean.
